Milk & Honey: Israel’s first single malt up for auction

Here’s a deal: The first 100 bottles of Israel’s first single malt whisky, made by the Milk & Honey Distillery in Tel Aviv, will be offered on a Scottish auction site this month.

It will be available on the Whisky Auctioneer website from 11-21 August for buyers interested in buying a bottle of the experimental series. And it’s kosher, certified by the Tel Aviv rabbinate.

The whisky has been aged for three years, meeting the standards of its Scottish counterpart, and described by its makers as mature and complex for its young age thanks to the warm Israeli climate.

It comes from the first barrel of the Milk & Honey plant, which was created in January 2014 by distillers Tomer Goren and Jim Swan, a consultant who died in February. Swan specialised in the maturation of whiskey in warm climates, but never had the chance to taste his Sabra creation.

The product was first aged in a 225-litre American oak cask and then distilled for seven months in a former bourbon barrel. It has hints of malted barley, cinnamon, pepper, lemon and marzipan.

The distillery has a visitor centre open to the public and will be selling its whisky commercially in 2019, when the distilled spirits are ready for tasting.
