#InternationalHummusDay: Ottolenghi on the Middle Eastern Hummus war!
Israeli and Palestinian chefs reflected upon on the role of Hummus in the Middle East, as we observe annual #InternationalHummusDay.
The clip from 2012 reveals how Israeli chef, Yotam Ottolenghi, and Palestinian chef, Sami Tamimi. view the region’s favourite dish.
They discuss ‘ownership’ of the dish, and how it is intertwined with Israeli and Palestinian culinary identity, sometimes even being able to transcend conflict.
Although Ottolenghi and Tamimi were both born in Jerusalem in the same year, they were split by the religious divide of the City.
Now both living in London, they cook together in the Ottolenghi restaurant in London and have published work together.
The chefs were on the BBC’s midweek Radio Four show with presenter Libby Purves, in 2012.
